Sausage & Bean Casserole

Ingredients

  • 500g of quality sausages (pork or chicken works best)
  • 2 x 400g cans cannellini beans, rinsed and drained
  • 700g jar of passata
  • 1tsp ground smoked paprika
  • 1 tsp mixed herbs
  • 1/2tsp garlic powder
  • 1/2tsp ground turmeric
  • 1 tbsp sriracha sauce
  • 1 tbsp worcestershire sauce
  • 1 large bunch of kale, ends trimmed and cut into bite sized pieces

Instructions

  1. Cook sausages in a large pre-heated frying pan or saucepan on medium-high heat until nearly done, approx. 7-8 minutes.

  2. (Optional) Cut the sausages into bite sized pieces, approx. 2cm long.

  3. Add the beans, passata, herbs, sriracha, worcestershire sauce and approx. 200ml of water to the pan. Wash the passata bottle with the water to get the last bit out before adding to sauce. Give it a quick stir to combine while bringing the pot to a simmer.

  4. Add the kale, reduce heat to low-medium and continue to simmer for another 7-8 minutes, until kale is tender and sausages have cooked through.

  5. Serve in bowls with toast, garlic bread or crusty baguette.
