Mediterranean Chicken Bowls

Ingredients

Chicken:

  • 500g chicken breast or thigh fillets
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp turmeric
  • 2 tbsp extra virgin olive oil

Salad:

  • 2 tomatoes or 12 cherry tomatoes, diced
  • 1 cucumber, diced
  • 1 handful of parsley, finely chopped
  • 1/2 a red onion, finely diced
  • Lemon juice, a squeeze

Tzatziki:

  • 1/2 cup natural Greek yogurt
  • Small handful fresh dill, chopped
  • Lemon juice, a squeeze
  • Olive oil, a drizzle
  • Pinch of salt

For the Bowl:

  • 2 scoops (1 1/2 cup) brown rice
  • 2 handfuls of kalamata olives
  • Hummus

Instructions

  1. Cook brown rice in rice cooker or microwave (this can take an hour or two)
  2. Slice the chicken into 4 even pieces and transfer to a bowl with seasoning ingredients. Marinate for minimum 30 minutes, or overnight in the fridge.
  3. Combine salad incredients in a small bowl, season with salt, pepper and extra virgin olive oil to taste.
  4. Combine tzatziki ingredients in a small bowl, mix well
  5. Cook the chicken in a pre-heated frying pan on medium heat, using another 1-2 tbsp of extra virgin olive oil to get a crispy finish.
  6. Rest chicken for 5 minutes before slicing into bite sized pieces.
  7. Prepare bowl with a base of rice, a couplease of teaspoons of hummus, chicken, salad, olives, and a drizzle of tzatziki over the top.
